Lunchbox: Palak Dal

Ingredients

1 cup lentils

1 small pack of baby spinach

2 cups water

1 tbsp grated ginger

4 cloves garlic

1 small onion

salt

1 tsp turmeric powder

1 tomato

cumin seeds

mustard seeds

black pepper

1 tsp garam masala

2 green chillies

Wash lentils thoroughly and place into a pressure cooker with 2 cups of water, spinach, turmeric powder, ginger, salt and chopped green chillies. Cook for 5 minutes.

Heat a karahi, and add some oil, mustard seeds, cumin seeds. After a minute, add the garlic and then onion, until it turns a golden brown. Add your chopped tomato and black pepper.

Once this has cooked for a minute or so, add the ingredients from the pressure cooker and stir.

 

Garnish with coriander and serve! We usually eat it with roti a side salad (raw onions/chillies), chutney and salty lassi!
